I'm going to switch things up a little bit since Photo Friday doesn't seem to get much action ;)

How about we post a recipe of whatever we like and we can also include a photo (a photo by you of the dish you made or a photo of the dish in general found on the web).

I look forward to the recipes AND the photos!! HAPPY FRIDAY EVERYONE!!!

I loveee mexican food so this is one of my favorites...

Creamy Enchiladas

8 lg flour tortillas
4 cups shredded cheddar cheese
1 lb ground hamburger
1 packet of taco seasoning (my fav is ortega brand)
1 small can of chopped green chile's (I cnt remember the oz, maybe 2?)
16 oz sour cream
1 can cream of chicken soup

* Preheat oven to 350 and lightly spray a 9x13 cassarole dish
*Brown hamburger and drain. Sprinkle with the whole pack of taco seasoning, 2 cups cheese and half ur can of chile's. Mix and set aside.
*in another bowl, mix all sour cream, cream of chicken soup, and the other half of ur chile's until well blended. Spoon half of the sour cream mixture into the bottom of your cassarole dish.
*Next, lay out your tortillas and fill them with hamburger mixture. Roll and set in the bottom of dish on top of the sour cream mixture.
*After all tortillas are filled, top with the rest of sour cream mixture. Then top that with the leftover 2 cups of shredded cheese.
*Bake for 25-30 mins, until your cheese has melted and not quite yet browned.
*Enjoy!! We like 2 top them with lettuce, tomatoe, green onion and salsa!!!
I don't hav a photo 2 go with this...

Spinach Quiche

Recipe - beat 8 eggs with 1/2 cup sour cream and 1/2 cup milk, some salt and pepper (btw I don't use measuring cups so I'm guessing at the amounts of the next ingredients!) I use about 3/4 cup fresh cut onions (some may saute first but I LOVE onion and like the crispy strong onion), 6-7 pieces cooked crumbled bacon (I use turkey bacon), about 3ish cups chopped fresh spinach, around 1 to 1 1/4th cup mozzerlla cheese and about 1 cup swiss..maybe a little more ;o)...add all that to the egg mixture and mix it all together then pour it in a quiche dish with your pie crust (uncooked pie crust) and bake for around an hour at 325 degrees. I serve mine piping hot with a ton of sour cream!

On the pie crust, I'm lazy. I used to make my own but since Pilsbury came out with the pre-made all nice and rolled ones...its just so much easier! lol

I love to cook so sorry 4 being a hog haha but if u love Red Lobsters Cheddar biscuits, these taste just like them and they r so easy 2 make. I jus posted the website bc it has step by step pictures!

I can't remember the last time I ate at Red Lobster but these look AWESOME!!!

I forgot to add the nutrional info to my recipe. It isn't exact since I tend to add a bit more cheese and a bit more bacon and onion and spinach...lol

Low Carb Pizza!

Low carb tortillas (either small ones or large ones)
Green Pepper
Onion
Pepperoni
Mozarella Cheese
Other ingredients if you prefer.
Low sugar or sugar free pasta sauce

Pre-heat oven to 400
Spray the tortillas with cooking spray and place on a non stick cookie sheet
Put in the oven for 15 minutes, flipping every once in a while so they stay flat (this will help firm them up)
Pull out the tortillas, then add the pasta sauce and toppings.
Replace back in the oven for approx 15-20 or until desired doneness.
Enjoy!

I actually made the ones in the picture below. They were so freakin' yummy!

I'll do a holiday one since we're into fall!
One of my favorite Halloween themed food is super easy and delicous. Mummy dogs! Made with Hot dogs, pilsbury crescent dough and cheese! I know that hot dogs are on the no no list but these are cooked until steaming and I read you ladies talking about nitrate free dogs :) You slice the dough, wrap the slices around the a small piece of cheese and hotdog and then bake at 375 for 11-13 minutes. Draw mustard eyes when they're done. YUMMMMM!

Angela that looks WAY yummy!!!!!! So glad you are finding some really yummy foods to make and still stick to your diet! And that pizza is so easy too!!!


Jess those are too cute!!!! I'm going to have to add those to our Halloween feast lineup!! Last year I made these little finger things and they looked really awesome, but I used vienna sausages and they tasted so gross no one would eat them! lol I'm going to try again this year using turkey dogs or something...
